Pancake Day falls on 16th February this year! Something we can do during lockdown is bake and cook, so here’s an easy pancake recipe:
- 100g Plain Flour
- 2 Large Eggs
- 300ml milk
- 1 tbsp sunflower or vegetable oil
- Lemon wedges
- Caster Sugar
- Golden Syrup
- Whatever you fancy!
Step 1: Mix the flower, eggs, milk, oil and a pinch of salt into a bowl or large jug and whisk to a smooth batter.
Step 2: Set a frying pan or crepe pan over a medium-low heat and add oil.
Step 3: Once hot, cook the pancakes for 1-2 minutes on each side until golden brown, store them in a low heat oven as you make more.
Step 5. Serve with lemon wedges and sugar or your favourite sweet or savoury filling. Enjoy!
